Why it matters — Affogato is one of the most popular café desserts on the Australian menu. Done well, it's spectacular; done badly, it's stale ice cream and weak coffee.

Use the best ice cream you can find — affogato is a two-ingredient drink, and both ingredients show.
Pour the espresso the moment it's pulled. Sitting espresso loses crema, and the textural contrast against cold ice cream is the whole point.
