Barista milk
A milk formulation (dairy or plant) designed specifically for steaming and textures — usually higher protein and sometimes added stabilisers.

Specially formulated plant-based milk designed to steam, texture, and pour like dairy. Common brands include Oatly Barista Edition, Minor Figures, Milklab Almond and Soy, and Bonsoy.
Why it matters — Standard plant milks don't texture well — they don't create stable microfoam, they curdle with espresso, and they pour unevenly. Barista formulations add stabilisers, emulsifiers, and adjust fat and protein content to behave more like dairy.
Good to know
- Oat barista milk has the most dairy-like steaming behaviour.
- Different barista formulations behave differently — Minor Figures pours thicker than Milklab; Oatly textures most stably. Worth trying a few for your menu.
