Brew chart (strength vs extraction)

A two-axis graph plotting TDS (strength) vs EY (extraction), with a "sweet spot" box defined by the SCA or the barista's own preference.

Category: Extraction — Measurement & Science

A two-axis graph plotting TDS (strength, vertical axis) against extraction yield (horizontal axis), with a "sweet spot" box defined by the SCA or by individual taste preference. Used to plot brews and visualise where each pull sits.

Why it matters — A brew chart turns dialling in from guesswork into geometry. Once you know your TDS and EY, you can see exactly which direction to push grind, dose, or ratio to land in your target zone.

Good to know

  • The SCA Golden Cup zone is roughly 18–22% EY at 11.5–13.5% TDS for espresso (the ranges differ slightly for filter).
  • Your personal preference box may not match the SCA box — that's fine. The chart is a navigation tool, not a verdict.
