Chemex

A glass pour-over brewer with a built-in filter holder and very thick paper filters, invented in 1941.

A glass pour-over brewer with an hourglass shape, a wooden collar around the middle for grip, and very thick filter papers (about 20–30% heavier than V60 filters). Designed in 1941 by Peter Schlumbohm and largely unchanged since.

Why it matters — The thick filter and large brewing geometry produce a cup with exceptional clarity and a tea-like, clean character. Different from a V60 or Kalita — fewer oils make it through, body is lighter, the cup is brighter.

Good to know

  • Always rinse the filter thoroughly with hot water before brewing — Chemex filters can carry a noticeable paper note otherwise.
  • Standard sizes are 3-cup, 6-cup, and 8-cup — buy slightly bigger than you think you need; brews are easier when the cone isn't packed full.
