Conical burr
A cone-shaped inner burr and a matching hollow outer ring, grinding beans as they pass between the tapered surfaces.

A grinder burr design with a rotating cone-shaped inner burr and a stationary cone-shaped outer ring. Beans enter at the top, get cut between the burrs, and fall out at the bottom.
Why it matters — Conical burrs tend to produce a bimodal particle distribution — many fines and many target-size particles — which translates to espresso with more body, sweetness, and slightly more crema than flat burrs of the same diameter.
Good to know
- The Mazzer Robur, Compak K10, and Mahlkönig K30 are classic conical espresso grinders.
- Conicals tend to outlast flat burrs of the same diameter because cutting force is distributed across a longer edge.
