A chamber on traditional commercial grinders with a manual paddle that delivers a measured dose into the portafilter when pulled. Used on old-school café grinders before on-demand dosing became standard.
Why it matters — Doser grinders run the burrs to fill the chamber, then dispense pre-ground coffee from the chamber as needed. They're fast in a busy café — but they store ground coffee, which stales it.
Good to know
- Largely superseded by on-demand (doserless) grinders in modern specialty cafés.
- Still used in some traditional café setups where speed matters more than freshness.
