An espresso shot that extracts much faster than expected — for example, hitting a 1:2 ratio in under 20 seconds.
Why it matters — Fast shots usually mean under-extraction. The coffee tastes sour, sharp, or weak. The grind is almost always the culprit — too coarse.
Good to know
- First step: grind finer in small increments and pull again.
- If grinding finer doesn't slow the shot, check the dose (might be too low), the basket (might be the wrong spec), or look for channelling with a bottomless portafilter.
