An alkaline detergent — sold as powder, tablets, or liquid — designed to dissolve coffee oils and residues during a detergent backflush. Urnex Cafiza and Puly Caff are the two reference brands; many private-label products work similarly.
Why it matters — Coffee oils don't dissolve in water alone. Without periodic detergent backflushing, oils harden in the brew path and start to gum the solenoid, restrict the shower screen, and impart a stale flavour to shots.
Good to know
- Detergent backflush weekly for home, daily for cafés.
- Rinse thoroughly afterwards (multiple water-only backflushes) — leftover detergent affects flavour and isn't food-safe at concentration.
