Lever group

A manually operated brew group where the barista uses a lever to generate extraction pressure, either via a spring (spring-lever) or by pressing directly on the water column (manual piston / dipper).

A group head where the barista pulls a lever to manually generate brewing pressure — either through a spring (spring-lever) or through direct hand pressure (manual lever). The original espresso group design, predating pump machines.

Why it matters — Lever groups produce a distinctive shot profile with a natural pressure ramp that pumps can't replicate. Shots typically start gentle, peak in the middle, and taper at the end — a profile many baristas associate with sweetness and clarity.

Good to know

  • Spring lever machines (La Pavoni, Olympia Cremina, Profitec Pro 800) deliver consistent pressure curves; manual lever (Strega, La Marzocco Leva) gives the barista direct control.
  • Lever groups need more skill but reward it with shots that feel different from a pump machine.
