Why it matters — Mochas are the most popular café-dessert drink. They're forgiving — chocolate masks weak coffee — but a great mocha uses quality chocolate, properly textured milk, and a balanced shot underneath.

  • Cocoa powder dissolves into hot milk; syrup dissolves easily; sauce is the richest but messiest.
  • Best mochas use real dark chocolate (60%+ cocoa) rather than syrup — the bitterness balances the coffee.
