Siphon (vacuum pot)
A two-chamber vacuum brewer where steam forces water up into the grounds chamber, then cools and draws brewed coffee back through a filter.

A two-chamber brewer (also called vacuum pot or Japanese siphon) where water heated in a lower chamber rises into an upper chamber, brews with the coffee there, then drops back down through a filter as the lower chamber cools.
Why it matters — The siphon produces an exceptionally clean, aromatic cup — somewhere between pour-over and tea. It's also a brewing spectacle, popular in Japanese specialty cafés and at coffee competitions.
Good to know
- A cloth filter is the classic choice; metal and paper filters also exist.
- Heat source matters — butane burners and halogen lamps give the most consistent results.
