Pouring from a single milk jug into two cups simultaneously by tilting the jug at an angle that splits the stream. Used in busy cafés to serve two drinks faster.
Why it matters — Saves time during peak service when two of the same drink are ordered together. Done well, both drinks get equal, well-textured milk.
Good to know
- Match the pour rate so both cups fill at the same speed — uneven flow leaves one drink with more foam.
- Practise on water before doing it for paying customers. Splitting badly produces two ordinary drinks; splitting well looks confident.
